The steps to cancel YouTube Premium on iPhone depend on how you subscribed. If you subscribed through the App Store, cancel in iPhone Settings. If you subscribed directly on the YouTube Premium website, use YouTube Premium's account page from your iPhone browser.

If you signed up for YouTube Premium through the App Store or on your iPhone, manage it in iPhone Settings:
